Raksha Bandhan, like all Indian festivals would be desolate without various sweets and festive foods. Kheer and phirni are favorites traditionally prepared by sisters in some parts of India. Sisters, if you can be near your brother on rakhi day, try out one of the recipies below. However, if you cannot be close to your brother on rakhi day, you could try to convince someone else to prepare kheer or phirni on your behalf. Vermicelli Kheer:
Ingredients:
Milk.............................800 mL
Vermicelli.....................40 g
Sugar...........................45 g
Ghee/unsalted butter.......10 mL (2 teaspoons)
Cardamom seeds............6 crushed
Almonds........................4 to 5 shredded
Raisins..........................1 desert spoon
Method:
1. Heat ghee / unsalted butter in a pan and fry the vermicelli lightly.
2. Boil milk and simmer for 10 minutes.
3. Add vermicelli to the milk and cook for some time on low heat, till kheer thickens to an even consistency.
4. Add sugar and cook for a few minutes stirring constantly.
5. Remove from heat.
6. Serve hot or cold garnished with the shredded almond and raisins.

Cottage cheese kheer:
Ingredients:
Milk..............................1 L
Paneer/cottage cheese.....100 g
Sugar............................60 g (4 Table spoons)
Almonds.........................4 to 5 shredded
Raisins...........................1 desert spoon
Kewra/rose water..............1 tea spoon
Method:
1. Cut the cottage cheese into very small cubes
2. Cook the cottage cheese cubes in milk on low heat stirring occasionally till the kheer thickens.
3. Add sugar and bring it to boil
4. Cool and add kewra or rose water
5. Serve cold, garnished with shredded almonds and raisins.

Phirni (Rice Pudding):
Ingredients:
Milk.......................................1 L
Rice flour.............................80 g
Sugar...................................100 g
Kewra/rose water..............1 tea spoon
Almonds..............................1 desert spoon (blanched and shredded)
Pistachios...........................1 desert spoon (blanched and shredded)
Raisins................................1 desert spoon
Method:
1. Bring milk to boil
2. Add rice flour slowly, while stirring, and cook gently on a medium heat stirring frequently, till the mixture thickens to creamy consistency.
3. Add sugar and dissolve and cook till mixture thickens again
4. Cool, and add rose water/ kewra.
5. Put the mixture in small glass bowls/earthen pot (Traditional way of serving)
6. Leave in the refrigerator to set.
7. Serve garnished with shredded almonds, pistachios and raisins.
